South Korean movies and television series have been popular in China for almost a decade. What is the secret behind this and other shows that have Chinese fans scrambling for the nation’s food and fashion?

South Korean TV soap opera Dae Jang Geum is winning over Chinese audiences thanks to actress Lee Young-Ae in the title role and the delicate art of Korean cuisine(饮食). “Han liu”, a transliteration of “cold front” is the Chinese acronym (首字缩拼词) for “Korean trends”, referring to the appeal of pop culture from South Korea. It’s recently reached a new peak with the airing of Dae Jang Grum. Also called The Great Jang Geum of Jewel in the Palace, Dae Jang Geum is a 2003 television soap apera produced by South Korean YV channel MBC. It has been sweeping across much of the Chinese-speaking world Hong Kong, Taiwan, and Chinese communities in San Francisco, Chicago as well as in Malaysia.

Now the show has come to the Chinese mainland. Hunan Satellite Television paid 10 million yuan (US$1.2million) to buy the mainland distribution rights. It purportedly has already doubled its investment by simply reselling the rights to other regional stations. This does not include revenues from commercials. Its claim to first airing in the mainland market, however, was destroyed by China Entertainment Television Broadcast Limited, a Tom Group company. The satellite television channel started airing the show on August 15, half a month before its debut on Hunan Satellite TV.

The show is about Jang Geum, a royal physician in the early days of the Joseon Dynasty(1392-1910). Many people hold that the character is based on the real life of the first female royal physician in Korean history. Others argue she is more likely a composite of several historical characters.

Audiences, however, hardly care for the details. They have been swept off the ground by the exquisite beauty of Lee Young-Ae, the actress who plays the title role, and more importantly, by the delicate craft(技艺) of Korean cuisine and medicine.

Adding a seaweed extract(海藻萃取物) to junk food could make it healthier without changing the taste, scientists say. Newcastle University researchers say adding the tasteless extract, called alginate(藻酸盐), would increase the fibre content of pies, burgers and cakes. This, they say, would mean people could still enjoy the foods they like, but eat more healthily. The research has been published in the journal Critical Reviews in Food Science and Nutrition. High-fibre diets, including foods such as brown bread and fruit and vegetables, have been shown to help reduce the indicence of life threatening illness. Alginate is high in fibre, so it can boost the fibre content of foods. But it also has other properties and uses. The researchers say it could be used as an anti-obesity treatment, because it forms a “lump” in the stomach and therefore helps you feel full.

Alginate is already widespread use by the food industry as a gelling agent(胶凝剂) and to thicken the frothy head (泡沫) of some lagers(啤酒). The Newcastle team looked at two brown-colored seaweeds which are found in the Far East, South America and parts of Norway and Scotland. The seaweed is processed in the laboratory to produce alginate---- a tasteless and odorless off-white colored powder--- that can then be added to food to enhance fibre content.

Professor Jeff Pearson, a member of the research team, said: “ We’ve just not eating enough fibre, yet we need this to keep us healthy.” The problem is that a lot of people don’t enjoy many of the foods that are high in fibre, like fruit and vegetable, yet to consume the recommended daily amount of fibre they would have to eat a lot of types of foods. “We believe it’s hard to change people’s habits and that the most practical solution is to improve the food they do eat.” With a burger, for example, you would simply remove some of the fat and replace it with the seaweed extract, which is an entirely natural product from a sustainable resource. “You’d have a healthier burger and it’s unlikely to taste any different.”

  Twenty-seven previously unknown species of spiders, centipedes(蜈蚣), scorpion-like creatures and other animals have been discovered in the dark, damp caves beneath two national parks in the Sierra Nevada, biologists say. “ Not only are these animals new to science, but they’re adapted to very specific environments---some of them, to a single room in one cave,” said Joel Despain, a cave specialist who helped explore 30 of the 238 known caves in Sequoia and Kings Canyon National Parks. The discoveries included a relative of the pill bug(球潮虫) so translucent that its internal organs are visible, particularly its long, bright yellow liver. There was also a daddy longlegs with jaws bigger than its body, and a tiny fluorescent(发光的) orange spider. “Many people will be looking at these trying to find where they fit in the tree of life,” said Darrell Ubick, a cave biologist with the San Francisco-based California Academy of Sciences. While it is extremely rare to find new mammal or bird species on the surface, caves still hold many secrets. Like the deep sea, they are often difficult to reach and seldom explored.

Discovering to many species was thrilling, said Jean Krejca, a consulting bioligist with Austin, Texas-based Zara Environmental who helped lead the three-year exploration.
